No-Bake Choco-Date Protein Oat Bars

6 INGREDIENT, REFINED SUGAR-FREE, DAIRY FREE, GLUTEN FREE PROTEIN BARS. YUP.


I must say... oats and dates never cease to amaze me. They can really do wonders.


My plan was to throw a bunch of ingredients into the food processor and see how it turned out. I wasn't ready for what was to come.




WHAT YOU'LL NEED:


Blender / Food Processor


INGREDIENTS:


BASE:


1 cup of pitted dates

1 cup of oats

2.5 scoops of vanilla protein

1/2 cup of coconut milk

lots of cinnamon :)


TOPPING:


1/2 cup Dairy-free / vegan chocolate chips - I love the Enjoy Life brand!

2 tbsp coconut milk

walnuts to top (or any other topping your heart desires!!)


STEPS:

  1. thow all dry ingredients into the blender/food processor

  2. add in 1/2 of your coconut milk

  3. pulse blender

  4. stop blender and scoop chunks out if they are stuck and add in the rest of the coconut milk

  5. blend until there are small chunks of dates! (if the mixture is getting stuck, add a little bit more coconut milk to soften the mixture)

  6. add the mixture to a freezer-safe container - set in the freezer!

  7. CHOCOLATE! add chips into a small saucepan with 2 tbsp of coconut milk

  8. continuously stir until it is smooth so it doesn't burn! (it's going to be thick!!)

  9. pour over the base mixture, add your walnut toppings and freeze for a few hours or overnight.
