PUMPKIN PIE - NO BAKE, GLUTEN FREE, DAIRY FREE

Here she is, my first attempt at a pumpkin pie.⁠

It’s been fun testing out new recipes that work with my stomach. Yes, it can be frustrating when you think you’ve hit all the right ingredients and it still aggravates your stomach... but when it’s right.. OH BABY. It makes all the trial and error worth while.⁠

NO BAKE, GLUTEN FREE, DAIRY FREE PUMPKIN PIE:⁠




Pie Crust:⁠

—1/2 cup coconut flour⁠

—1/2 cups of slightly blended gluten free oats⁠

—1/2 cup gluten free gram cracker crumbs⁠

—1/2 cup melted coconut oil⁠

—2 tbsp raw honey⁠

—cinnamon⁠

—pinch of salt⁠

1. Mix all ingredients together⁠

2. Set in a pie tray with parchment paper (I used a frying pan lol)⁠

3. Use another piece of parchment paper to press the mix down until compact. ⁠

4. Put crust in the freezer for 20 minutes ⁠

Pie Filling:⁠

—2 cups of sugar free pumpkin pie purée ⁠

—1 tbsp vanilla⁠

—1/4 cup raw honey⁠

—1/2 cup munk fruit sweetener⁠

—cinnamon⁠

—pumpkin pie spice ⁠

—pinch of salt⁠

—pumpkin seeds ⁠

1. Mix all ingredients together ⁠

2. Fill pie crust ⁠

3. Let sit in the freezer for 1 hour⁠

4. Enjoy!!⁠
